Chevre de Moulé Main
This small, aged goat cheese is similar to a Sainte Maure in flavor. Rather than being formed into a log, however, Chevre de Moulé Main is a made in small disks that weigh about four ounces each. The edible rind on this cheese has a beautifully textured appearance with its tightly packed hills and valleys. The cheese inside has a chalkier texture than fresh goat cheese and a more developed flavor. The grassy overtones of the goat’s milk have had time to meld nicely with its tanginess during the Chevref aging period this cheese has been allowed.
